Oh, how I love a good cookie. I got this recipe at a cookie exchange years ago and it has become a family favorite. It is hard to believe but they really are better the next day!
Scandinavian Almond Cookies
½ Cup Butter
1 Cup Sugar
Combine until creamy.
Add
1 Egg
½ tsp. Almond extract
Mix thoroughly and add the following dry ingredients:
1 ¾ Cup Flour
2 tsp. Baking powder
¼ tsp. Salt
Mix well. Divide into
4 balls. Form each into a 10 inch
roll. Place on ungreased cookie
sheet. Flatten slightly until 2-3”
wide.
Brush with
Milk and sprinkle
with
½ Cup Sliced Almonds,
coarsely chopped
Bake at 325 degree oven for 12 – 14 minutes (until edges are lightly browned. While cookies are still warm, cut them crosswise at a diagonal into 1 inch strips. Cool then drizzle almond icing.
Almond Icing
Stir together till a drizzling consistency:
1 Cup sifted Powdered Sugar
¼ tsp. Almond extract
3-4 tsp. Milk
Makes 3 dozen
